Pasta with Clams, Prosciutto and Spinach


Once again I found myself assessing what random ingredients I had, threw something together and it worked! Quick, easy and tasty as hell. And as usual, measurements are all approximate. I eyeball it.

INGREDIENTS:

8 oz. Pasta (i used a wheat spaghetti)
8 oz. Clams (i had frozen)
2 oz. Prosciutto thinly sliced
1/4 cup butter
3 handfuls of fresh spinach
1 tsp cayenne pepper
4 Tbs Olive Oil
Salt and Pepper to taste

DIRECTIONS:
Boil the pasta to preferred tenderness and set aside. In a large skillet or wok, add olive oil. Over a medium heat add butter and clams, stirring occasionally. Cook for a couple minutes. Add prosciutto and spinach, again stirring occasionally. Cook for a couple more minutes. The spinach will begin to shrink down and prosciutto will begin to brown. Be careful not to overcook. Should only take 2-3 minutes. Season with cayenne, salt and pepper. That's about it. Enjoy!
