Cock Sauce & Surimi Salad


So I was feeling a little creative and started rummaging through the fridge to see what I could make. I found imitation crab meat that needed to be used or it was gonna go bad. What can I do with imitation crab meat? I was too lazy to make fake crab cakes so I searched further and started assessing what I had to work with. This recipe is what I came up with. Totally freestyled it (as with much of my cooking). I think it came out pretty damn good. As per usual measurements are always approximate. I don't really measure things out. I just wing it.

INGREDIENTS:
1 pkg. of imitation crab meat chopped (or for fancy people - Surimi)
1 pkg. of Canton egg noodles (approx. 14 oz).
1/2 c. chopped yellow, red and/or orange bell peppers
1/2 c. chopped vidalia onion
1/2 c. chopped black olives
1 c. of mayonnaise.
2 Tbsp. Sriracha Thai Hot Sauce
2 Tbsp. of lime juice.
1/4 c. grated Parmesan cheese.
Salt & Pepper to taste.

DIRECTIONS:
Boil the egg noodles, drain and cool. In a bowl mix your mayo, sriracha, lime juice and parm. That's the dressing. Toss it all together with the crab, onion, olives and peppers in a salad bowl so it is evenly coated. Salt & Pepper to taste. Serve chilled.

SERVES: 4-6 People (I guess)
